Creamy Tomato Sushi

Think tomato doesn't belong in sushi? I was skeptical at first too but I am telling you, it works so well. This recipe is a regular in our house, with creamy tomato and avocado, crispy capsicum and crumbly tofu, where can it go wrong!

  • Small saucepan
  • Small baking dish
  • Sushi rolling mat (this is not a necessity)
  • Sharp knife
  • Chopping board


Sushi Rice

  • 2 cups sushi rice aborio rice also works
  • 4 cups water
  • 2 Tbsp rice vinegar you can use any vinegar here, we often use apple cider vinegar

Creamy Tomato Filling

  • 4 tomatoes diced
  • 3 cloves garlic
  • 1 green capsicum thinly diced, or any colour
  • 250g tofu firm
  • 4 Tbsp tahini aka sesame seed paste
  • 4 Tbsp tamari or soy sauce


  • 10 sheets nori
  • 1 avocado sliced


  • Preheat oven to 180 degrees celsius.
  • Add the sushi rice and vinegar to a small saucepan bring to a boil and then reduce and leave to simmer on a low heat for 5-10 minutes or until all the liquid has been absorbed. Then set aside.
  • In a small baking dish, add the tomatoes and garlic cloves and bake for 30 minutes.
  • Add the tahini, tamari, tofu and capsicum to the tomatoes and mix, mashing the tomatoes as you combine all ingredients.
  • Take one sheet of nori and lay it on the rolling mat. Add two heaped Tbsp of the sushi rice and spread evenly over the nori, leaving a one cm strip on the end furthest from you.
  • Make a line of the filling about two cm away from the end of the nori closest to you. Remember not to put too much, 2 heaped Tbsp will be plenty.
  • Place two avocado slices along the filling strip.
  • Roll the sushi starting at the end closest to you and roll away. Use the sushi mat to assist you. Hold the sushi roll for 10 seconds and set aside while you make the rest.
  • Repeat steps 5, 6, 7 and 8 with the remaining ingredients.
  • Slice your sushi into bite size pieces and serve with tamari or preferred sushi dipping sauce.


Don’t be discouraged if your first few rolls don’t turn out well. You’ll be a natural in no time!
