Quesadillas

This meal will definitely impress your dinner guests. These quesadillas are filled with a simple yet tasty bean mix with smoked cashew cheese and homemade wraps. Easy, homemade and delicious!

Equipment

  • Toasted sandwich maker
  • Rolling Pin
  • Fry pan
  • Sharp knife
  • Chopping board
  • Mixing bowl

Ingredients

Wraps

  • 2 cups plain flour
  • 3/4 cup water
  • 1/2 tsp salt

Cashew Cheese

  • 1 cup cashews soaked
  • 3/4 cup water
  • 2 Tbsp onion powder
  • 1 tsp smoked paprika
  • 1 tsp nutritional yeast
  • 1 pinch salt and pepper to taste

Bean Filling

  • 1 brown onion sliced
  • 3 cloves garlic diced
  • 1 Tbsp oregano dried
  • 1 Tbsp cumin ground
  • 1 Tbsp paprika ground
  • 1/4 tsp cayenne pepper or chilli powder/flakes
  • 3 Tbsp tomato paste
  • 500 g kidney beans cooked
  • 1 pinch salt and pepper to taste

Cooking

  • 4 Tbsp olive oil or oil of choice

Instructions

Wraps

  • In a medium mixing bowl, combine the wrap ingredients and kneed for 5 minutes. Seperate dough into 8 equal parts and roll each one out into a thin flat disk. Set aside while you prepare the rest.

Cashew Cheese

  • Add all the cheese ingredients into a blender and blitz until smooth and creamy.

Bean Filling

  • Preheat the toasted sandwich maker.
  • Sauté the onion and garlic in a fry pan until soft.
  • Add the spices to the fry pan and fry until fragrant.
  • Add the rest of the filling ingredients to the fry pan and mix.
  • Turn off the heat and roughly mash the beans.

Quesadillas

  • Grease the toasted sandwich maker using oil.
  • Place one spoon full of the filling and another spoon of the cashew cheese on one half of the wrap and fold it over.
  • Cook quesadillas in the toasted sandwich maker until golden brown.
  • Serve with a salad and guacamole.

Notes

Add more chilli to the mixture if you prefer more spice.
